Now that it is officially October, I can start thinking about my favorite cold weather dishes. Mashed potatoes have always been a favorite of mine, but not the healthiest of recipes. I have pulled some new favorites to add to my list for this season. Two of the dishes are actually made with cauliflower (a healthier alternative, and you can't taste the difference) Hope you enjoy them just as much as I do! 




Directions

Place 1 head cauliflower florets in a 2-quart baking dish. Whisk 1/2 cup heavy cream, 1/2 teaspoon dry mustard and 1 teaspoon salt, then pour over the cauliflower. Sprinkle 1 cup shredded gruyere and 1/3 cup breadcrumbs on top. Bake at 350 degrees F until tender, about 45 minutes.





Directions

Pierce 4 sweet potatoes with a fork; microwave 8 minutes. Scoop the flesh into a bowl, then mash. Brown 3 tablespoons butter in a skillet, then add 8 sage leaves and fry until crisp; transfer to a plate. Cook 4 chopped scallions with salt and pepper in the browned butter. Drizzle over the sweet potatoes; top with the sage.





Directions

Place 8 oz of Greek yogurt, 1-2 Tablespoons of wasabi powder and 1/2 teaspoon of salt in the food processor. let it chill while you cook 1 head of cauliflower. Steam the cauliflower until tender (about 20 mins). Add the yogurt mixture and cauliflower, then blend. sprinkle with chives for presentation.
